When we eat food, our taste buds on the tongue and other areas of the mouth identify four taste qualities (sweet, sour, salty, and bitter). However, much of what we perceive as flavor actually comes from our sense of smell. When we chew, the aroma of the food travels from the mouth and through the nasal passageways to the olfactory receptors in the nose.
